History of a Bagel Baker
The Bagel Baker wasn't introduced to "fancy" bagels until he was in his 20s. Cheese? Chocolate Chips? Tomatoes? Pesky little (no-name) squishes? Rainbows (Say What?!?!) This is the reason the Bagel Baker's face goes into contortions when our AMAZING customers mention different flavors they have tasted in their lifetimes. He is TOTALLY befuddled!
Bagelology 101
Yeast LOVES sugar!? Any sugary-type ingredient added to our base recipe makes the yeast VERY happy while keeping the Bagel Baker up at night. Also, not all ingredients have the same liquid content which requires the Bagel Baker to adjust the amount of water in the dough. Today, we are working on improving the yeast and water content of our bagels based on the temperature and humidity levels our kitchen.
